Mojito £6

Serves one

• juice of 1 lime
• 1 tsp granulated sugar
• small handful mint leaves, plus extra sprig to serve
• Double shot white rum
• soda water to taste

step 1

Muddle the lime juice, sugar and mint leaves in a small jug, crushing the mint as you go – you can use the end of a rolling pin for this. Pour into a tall glass and add a handful of ice.

step 2

Pour over the rum, stirring with a long-handled spoon. Top up with soda water, garnish with mint and serve.

Margarita - £6

Serves one

• Double shot White Tequila
• Single shot Cointreau
• Juice of 1 lime
• Salt

step 1

Put a little salt on a saucer, then wipe the rim of your martini glass with lime juice. Turn the glass upside down in the salt and twist to coat.

step 2

Combine the tequila, cointreau and lime juce and ice in a cocktail shaker. Shake. Strain into the martini glass.

Sex on the beach £5

Serves two

• Double shot vodka
• Single shot peach schnapps
• Double shot orange juice
• Single shot cranberry juice

step 1

Fill two tall glasses with ice cubes. Pour the vodka, peach schnapps and orange juice into a cocktail shaker filled with ice. Shake and strain into the glasses.

Step 2

Pour in the cranberry juice.

Jug of Pimms £11

• 1/4 jug pimms
• 3/4 lemonade
• Mint leaves, strawberries, cucumber etc

Put the ice in the jug, pour in the pimms and lemonade, stir, add the mint etc
